Was going to do an Octoberfest, but couldn't find an easy extract recipe for that. PLUS, an octoberfest really is a Lager and I am not ready or equipped to do a lager. (yet)
So today I am doing an amber ale.
Why so soon you might ask. Well, I am not going to be at the brewery for a couple weeks and wanted to have this for Beerfest in early october. So today I will brew. Next week I will put it in Secondary and then be away for a couple weeks.
By all accounts a couple weeks in Secondary is fine and actually is pretty common.
I will bottle upon my return and it will be well aged and ready for Beerfest.
